Pineapple BBQ Chicken

Pineapple BBQ Chicken

Ingredients:

  • Butter or oil

  • Chicken breasts, cut into 1 inch cubes

  • Himalayan pink salt

  • Ground black pepper

  • Garlic powder

  • Red onion, cut into chunks and separated

  • Red, orange, yellow, and/or green bell pepper, seeded and cut into chunks

  • Pineapple, peeled, cored, and cut into smallish wedges


Method:

  1. Melt butter or heat oil in skillet.

  2. Season chicken with salt , pepper, and garlic powder. Cook to opaque.

  3. Add onions, peppers, and pineapple, and continue cooking until almost tender.

  4. Pour on Homemade BBQ sauce, and simmer for a few minutes to let flavors blend.

  5. Feast away! Delicious as is or over rice. Leftovers are awesome on pizza!


Ingredients for Homemade BBQ Sauce:

  • 1 c Kimchi Ketchup

  • 1/4 c Apple Cider Vinegar - our Sipping Blend is milder and sweeter, while the Medicinal blend is more pungent and tart. Either can be used in this recipe!

  • 2-3 T brown sugar

  • 1/2 t chile powder - grind whole chiles into fine powder! Use Yunnan or Arbol chiles if you like spicy, or Guajillo if you prefer a sweeter and milder flavor - or make your own blend using a mixture of chiles!

  • 1 T yellow mustard

  • 1/2 t dijon mustard

  • 1/2 t ground black pepper

  • 1-2 T finely diced onion, or onion powder

  • 1 T garlic powder

  • 2 T Worcestershire sauce

Method for Homemade BBQ Sauce:

  1. Blend all ingredients until smooth.

  2. Use immediately, or store in a jar in the fridge.
