Mouthgasmic RECIPES from the Garden
Ingredients:
Butter or oil
Chicken breasts, cut into 1 inch cubes
Red onion, cut into chunks and separated
Red, orange, yellow, and/or green bell pepper, seeded and cut into chunks
Pineapple, peeled, cored, and cut into smallish wedges
Method:
Melt butter or heat oil in skillet.
Season chicken with salt , pepper, and garlic powder. Cook to opaque.
Add onions, peppers, and pineapple, and continue cooking until almost tender.
Pour on Homemade BBQ sauce, and simmer for a few minutes to let flavors blend.
Feast away! Delicious as is or over rice. Leftovers are awesome on pizza!
Ingredients for Homemade BBQ Sauce:
1 c Kimchi Ketchup
1/4 c Apple Cider Vinegar - our Sipping Blend is milder and sweeter, while the Medicinal blend is more pungent and tart. Either can be used in this recipe!
2-3 T brown sugar
1/2 t chile powder - grind whole chiles into fine powder! Use Yunnan or Arbol chiles if you like spicy, or Guajillo if you prefer a sweeter and milder flavor - or make your own blend using a mixture of chiles!
1 T yellow mustard
1/2 t dijon mustard
1/2 t ground black pepper
1-2 T finely diced onion, or onion powder
1 T garlic powder
2 T Worcestershire sauce
Method for Homemade BBQ Sauce:
Blend all ingredients until smooth.
Use immediately, or store in a jar in the fridge.
