Mouthgasmic RECIPES from the Garden
Ingredients for Meatballs:
1 pound ground beef, or ground beef and pork
½ onion, minced
½ bell pepper, minced
1 carrot, grated
½ zucchini, grated
1 egg
1 cup stale bread crumbs
½ cup nutritional yeast, or Parmesan or Romano cheese
1 teaspoon garlic powder
Himalayan pink salt to taste
Cayenne pepper to taste
Black pepper to taste
Homemade or jarred marinara sauce
Ingredients for Garlic Bread:
5 tablespoons butter
1 teaspoon garlic powder
1 tablespoon fresh parsley, finely chopped
1 tablespoon nutritional yeast or Parmesan or Romano cheese
Loaf of bread
Garnishes:
Mozzarella cheese, nutritional yeast, tomato, red onion, hot sauce, and/or Parmesan or Romano cheese
Method:
Place shredded carrot and zucchini on a clean towel and wring out as much liquid as possible.
Mix strained carrot and zucchini with beef (or beef and pork), onion, bell pepper, egg, bread crumbs, parmesan or Romano cheese, garlic powder, salt, cayenne pepper, and black pepper until just combined.
Form into balls roughly the size of a ping-pong ball.
Pan fry until brown on all sides. Add the marinara sauce and simmer for 10-15 minutes.
While meatballs are cooking, prepare the garlic bread: mix butter, garlic powder, parsley, and nutritional yeast or cheese and smear on bread. Bake or fry until golden brown.
Assemble sandwiches: pile meatball onto bread, top with mozzarella cheese, and broil or grill until cheese is melty and gooey.
Sprinkle with nutritional yeast, tomatoes, red onion, hot sauce, and/or Parmesan or Romano cheese and feast away!
