Mouthgasmic RECIPES from the Garden
We love our daily salads, and enjoy a unique creation every time at our shared communal dinners! We utilize the season's abundant bounty to create big, ever-changing spreads to nourish our whole community and satisfy all the senses! Quantities of each ingredient depend on the size of your crowd, and their unique taste preferences. For delicate salads with a base of lettuce (rather than something hearty like cabbage), we recommend serving your homemade dressing on the side so your beautiful creation doesn't get soggy!
Ingredients for Salad:
Freshly harvested greens - for this masterpiece, we used a combination of romaine lettuce and lamb's quarter
Orange and yellow bell or piquillo peppers, sliced
Red onion, sliced
Carrots, thinly sliced
Pistachios
Sunflower seeds
Herbs - chives, cilantro, and/or parsley
Shredded goat's milk cheddar or other cheese
Dried dates, chopped (or use small dollops of Spiced Date Spread)
Oxalis for garnish (pretty purple plant related to clover)
Ingredients for Dressing:
Oil - try flax, avocado, or olive oil
Sipping or Medicinal Apple Cider Vinegar
Dijon mustard
Method:
1. Layer salad ingredients on a pretty platter.
2. Shake dressing ingredients in a jar to serve on the side.
3. Sprinkle each serving with pink salt, black pepper, and nutritional yeast; drizzle with dressing; and feast away!
