Mouthgasmic RECIPES from the Garden
Ingredients for French toast:
8-12 slices of hearty bread of choice
6-8 eggs
1 cup milk or half & half
½ tbsp pure vanilla or almond extract
1 cinnamon stick, powdered
Zest of ½ of a lemon or orange
2 tbsp sugar, agave syrup, or honey to desired sweetness
Pinch of Himalayan pink salt
1-2 tbsp butter
Ingredients for Kumquat and Mint Marmalade:
2 pounds kumquats, seeds and white center membrane removed (no need to peel)
1 cup sugar
Zest of 1 lemon or orange
Splash of orange juice
Pinch of cayenne
Pinch of Himalayan pink salt
Handful of mint or chocolate mint
Method for French toast:
1. Beat eggs with milk or half and half, vanilla or almond extract, cinnamon, lemon or orange zest, sweetener of choice, and a pinch of Himalayan pink salt to make the custard.
2. Soak the bread slices in the custard, flipping once.
3. Heat butter in a skillet on medium heat, and fry custard-soaked bread slices on each side until golden brown.
4. Serve hot with Kumquat and Mint Marmalade.
Method for Kumquat and Mint Marmalade:
Mix all ingredients except mint in a pot.
Simmer over medium heat, stirring often.
Cook about 30 minutes to desired thickness.
Serve warm or cold with Citrus French Toast. Store any remaining marmalade in the in the fridge.
