Health Benefits of Cumin
Cumin
Cumin is a member of the parsley family! It is the dried seed of the annual Cuminum cynimum herb plant, which can grow to be 1-2 feet tall.
The oblong seeds grow from a flower, and they have 8 ridges with oil canals. Cumin seeds are sometimes mistaken for caraway, another member of the parsley family.
Cumin is a staple spice used in kitchens across the world including the Americas, Mexico, Spain, India, North Africa and the Middle East, and is said to have been prized across the ancient world as not only a culinary spice, but also as make up, money, and even as a preservative in mummification!
Cumin can be used as whole seeds, or as a powder. It is a key component in chili, taco seasoning, and garam masala.
RECIPES from the Garden
TEXAS CHILI

Ingredients:​

1 ½ teaspoons coconut or olive oil

1 cup chopped yellow onion

1 cup chopped green bell pepper
-
1 cup chopped red bell pepper
-
4 garlic cloves, minced or 2 T garlic powder
-
1 pound ground beef or bison
-
½ pound spicy ground pork sausage
-
1 tablespoon chili powder
-
1 tablespoon ground cumin
-
1 teaspoon dried oregano
-
1 teaspoon unsweetened cocoa powder
-
1 teaspoon Worcestershire sauce
-
3 large crushed tomatoes
-
1 teaspoon cayenne pepper
-
1 ½ teaspoons Himalayan pink salt
-
½ teaspoon ground black pepper
-
Toppings (optional): cheddar cheese, diced red onion, sour cream, chopped tomatoes, green onions, squeeze of lime, parsley or cilantro, avocado slices, hot sauce

Method:
1. Cook onion and bell peppers in oil over medium heat until tender. Add garlic and cook until fragrant, about 1 minute.
2. Stir ground beef or bison and sausage into onion mixture. Cook until meat is browned and crumbly.
3. Add remaining ingredients. Bring to a boil, reduce heat to low, and simmer until flavors blend.
4. Enjoy this hearty chili by itself, or garnished with your preferred toppings!
